Why just bake beans when you can smoke 'em?
I make these about every time I run the smoker. They always turn out good.
Ingredients
- One (1) - No.10 can of baked beans - https://www.walmart.com/ip/Bush-s-Original-Baked-Beans-Canned-Beans-117-oz-Can/21560291
- One (1) - Baseball sized white onion - https://www.walmart.com/ip/Fresh-Whole-White-Onions-Each/51259208
- One (1) - Pack of bacon, thick cut - https://www.walmart.com/ip/Wright-Brand-Applewood-Real-Wood-Smoked-Thick-Cut-Bacon-Refrigerated-24-oz-Plastic-Pouch/10533735
- ~1/2 cup - Sweet Baby Ray's Original BBQ Sauce
- ~1/3 cup - Brown Sugar
- ~1/4 cup - BBQ Seasoning (your choice)
- One (1) - Aluminum half pan - https://www.walmart.com/ip/Mainstays-Aluminum-Half-Steam-Table-Pans-12-75-x-10-38-x-2-81-inch-4-Count-per-Pack/5175262135
Preparation
- Place the whole slab of bacon in the aluminum pan and put in the smoker for about 10-15 minutes until it's loose and floppy but not rendering out grease yet.
- Pull out all the bacon and set half aside for later.
- Chop up the remaining half into chunks and place back into pan.
- Chop up entire onion to little pieces and put in pan with chopped onion.
- Place the pan on a stove burner or smoker fire box (Med/High Heat) until the onion begins to turn translucent and the bacon is cooked down and rendering grease.
- Dump the can of beans in the pan on top of the onions and bacon (I don't drain the liquid gold, I leave it in).
- Mix thoroughly.
- Sprinkle the BBQ seasoning and Brown Sugar on top of the beans.
- Spread the remaining bacon on top of the beans in a nice bacon weave.
- Drizzle about 1/2 cup (or more) of Sweet Baby Ray's Original BBQ sauce over the bacon layer and spread thin with a spoon or knife or tree branch.
- Smoke until the top layer begins to caramelize and beans are hot.
