Basic Vanilla Cake

  • YIELD - Two (2) 9" Cakes
  • TIME - 60 minutes (30 prep, 30 bake)

Ingredients

  • 2 sticks unsalted butter, at room temperature, plus more for the pans
  • 3 cups all-purpose flour, plus more for the pans
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/4 cups whole milk

Preparation

  1. Preheat oven to 350`F.
  2. Butter two 9" round cake pans and line the bottoms with parchment paper.
  3. Butter the parchment and dust the pans with flour, tapping out the excess.
  4. Whisk 3 cups flour, baking powder and salt in a bowl until combined.
  5. Beat 2 sticks butter and sugar in large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes.
  6. Reduce to medium speed and beat in the eggs, one at a time, scraping down the bowl as needed.
  7. Beat in the vanilla. (The mixture may look seperated, it's ok)
  8. Beat in the flour mixture in 3 batches, alternating with the milk. Begin and end with flour.
  9. Divide batter between the two pans.
  10. Bake until lightly golden on top and a toothpick inserted in the center comes out clean. 30-35 minutes.
  11. Transfer to racks to cool for ~10 minutes.
  12. Trim the tops of the cakes to make them level if desired.
